It was on the coast of Brittany, a few hours from Paris, that Iris and her father, Manuel, came up with their ambitious idea. What if the sweet waffles they so enjoyed in front of the ocean were to take centre stage in healthy gastronomic recipes? This is how the healthy, gluten-free waffle was born. Shortly after, the Yummy & Guiltfree pastry shop opened its doors in the heart of the Marais district in Paris. Alongside the indomitable sweet waffles, the chef has created savoury waffles with exquisite flavours. Discerning palates will not be able to resist the house speciality – marinated salmon accompanied by cream cheese, fennel with black sesame seeds and a drizzle of hazelnut oil. Canelé: bring on the spice!
A stone's throw from the Pompidou Centre, is another maverick foodie venue. At 72 rue la Verrerie, you will discover a pastry shop specialising in canelés. There, these traditional cakes from Bordeaux made from milk, rum, vanilla and sugar have experienced something of a revolution. The shop's founders, both called “Aude”, longed to create sweet and savoury treats like no other. Let yourself be tempted by the “Special”, a delicacy of chicken, truffle and basil, freshly made for your pleasure. Or maybe the “Céline” is more to your taste – a canelé filled with a spicy blend of curried celery. Even the most refined gourmet will be blown away by this stunning marriage of textures.

The taste of the sun in a madeleine
Olive oil, Espelette pepper, tapenade, feta cheese… the flavours of the south in the guise of a madeleine. At Mesdemoiselles Madeleines, on Rue des Martyrs, forget everything you know about this delicious famous French buttery cake. Head pastry chef, Stéphane Bour, has come up with a surprising collection of savoury treats. When you taste the “Renée” madeleine with its black olive tapenade, fresh carrots and cumin, all the flavours of Provence will drift into you mind. As you bring the speciality “Aimée” to your mouth, its feta, lemon and toasted pine nuts garnished with basil will whisk you away to a Greek island, caressed by the warm Mediterranean breeze. After a visit to the Arab World Institute and a stroll along the Bassin de l'Arsenal marina, you will find yourself in front of the mouth-watering window of She's cake. There, the air is full of a mix of aromas from the colourful cheesecake recipes. With each passing season, chef Séphora Saada prepares a menu much to the great delight of gourmet palates.
